HighPerformance Liquid Chromatography (HPLC) was used to determine encapsulation efficiency. Fourier Transform Infrared Spectroscopy (FTIR) was employed to identify functional groups, while X-Ray Photoelectron Spectroscopy (XPS) confirmed elemental composition. Dynamic Light Scattering (DLS) was used to measure hydrodynamic particle size, zeta potential, and polydispersity index. Stability and sustained release of Vitamin C were evaluated under physiological and thermal conditions.
